I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Yum Yum Cake

This is a snack cake that in the original recipe was mixed right in the baking pan.  I prefer to mix it up in a bowl.  Works either way.

1 cup flour
1 cup sugar
3/4 tsp baking soda
1 egg
1/2 tsp vanilla extract
1 - 8 oz can fruit cocktail (undrained)
1/2 cup chopped nuts
cream cheese frosting

Combine all ingredients (except frosting), mix well.

Pour into ungreased 8-inch square cake pan.

Bake at 350F for 30-40 minutes. Check center, toothpick should come out clean.


Cream Cheese Frosting

1/4 cup butter, softened
1 - 3 oz package cream cheese, softened
1 cup icing sugar
1/2 tsp vanilla extract

Blend together. Cool cake about 10 minutes and frost while still slightly warm. This is one of the moistest cakes you'll ever make.  Even after a week (if you still have some left) it's just as moist as the first day.

Serves 9
