I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Pork and Beans Stuffed Sweet Potatoes

This is a meal in itself!

2 or 3 medium sized sweet potatoes
1 tbsp freshly chopped parsley
2 tbsps sour cream
2 pinches garlic powder
1 pinch dry mustard
1/2 - 3/4 cup cooked cubed smoked pork shoulder
1 can baked beans (or definitely homemade if you have it!)
Sour cream to garnish (optional)

Wash the sweet potatoes and pierce a few times with a knife. Wrap each one in a dampened paper towel
and microwave individually about 2 minutes. Turn over for another 2-3 minutes. If yours are bigger than mine, give them alittle more time in the micro until they are cooked.

Cut in half and cool until you can handle them.  Scoop out the potato, mash it up in a bowl and add the parsley, sour cream, garlic powder and dry mustard.

Spoon this mixture back into the potato shells. Top with pork shoulder.
Place in a covered casserole dish and bake at 350 F for 20-30 minutes or until hot.
Heat the baked beans and pile them on top.
