I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Spinach and Avocado Lasagna

Seems like everything has avocado in it lately so I thought I would try it in lasagna.

Serves 4 - 6 

2 cups chopped spinach, packed
1 avocado
4 tbsps finely chopped onion
1 egg
3 tbsps parmesan
12 lasagna noodles
3 cups tomato sauce
1  1/2 cups shredded mozzarella

Cook lasagna as per package directions, then drain and set aside. Toss with a little oil so they don't stick together.

Mash the avocado and mix it with the spinach, onion, egg and parmesan.

Spray an 8 X 11" baking dish with cooking spray then spread a few tablespoons of sauce over the bottom.

Now start layering....
3 noodles, 1/2 the spinach mixture
3 noodles, 1/2 the tomato sauce
3 noodles, the rest of the spinach mixture

And finally the last 3 noodles and the remaining tomato sauce. Top it all off with the shredded mozzarella.

Bake in a 350 F oven for 40 - 45 minutes.
Rest 10-15 minutes before cutting.
Or if you are making it ahead of time for later use, chill then cut into squares and package individually for re-heating later.
