I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Carrot Apple Coffee Cake

Just a dressed-up cake mix...


432g (15 oz) carrot cake mix
3/4 cup sour cream
1/4 cup vegetable oil
2 eggs
1 carrot, shredded
4 or 5 apples, sliced
1 tbsp lemon juice
1/4 cup sugar
1 tsp cinnamon

Crumble:
1 cup flour
2/3 cup brown sugar
1/2 cup sugar
1/2 tsp salt
1 tsp cinnamon
1/4 cup cold butter

Mix the dry ingredients for the crumble together and cut in the butter. Keep chilled in fridge until needed.

Mix apples with lemon juice, sugar and cinnamon.

In a large mixer bowl combine cake mix, sour cream, vegetable oil, eggs and shredded carrot. The batter will be thick.

Line a 13 X 9" baking dish with parchment and pour the batter in. As it is thick you need to spread it out evenly.
Sprinkle on 1/2 the crumble.


Distribute the apples evenly and cover with the remaining crumble. Press lightly with your hands.


Bake at 350 F for 40-45 minutes.


Serve plain or à la mode.
